Fresh from the Docks
Shrimp Scampi
2 lbs. shrimp, peeled and deveined (make sure they were caught in the USA!)
1 stick of butter
3 tbsps. olive oil
1/2 cup white wine
1 lemon, juiced
1 1/2 tblsp. italian seasoning
1 small Vidalia onion, grated
3 garlic cloves, minced
1 roasted red pepper, finely chopped
12 oz. linguine, cooked according to package directions, set aside and kept warm
salt and pepper to taste
Fresh grated Parmesan cheese to taste
Melt butter, along with olive oil, white wine, and lemon juice in a large sauce pan over medium heat. Add
Italian seasoning, onion, and garlic until onion is just tender. Add shrimp and roasted red pepper and cook until shrimp just turns pink. Serve shrimp and the sauce over linguine, and add salt, pepper, and parmesan cheese. This is a really easy recipe, and very tasty. I like to serve this with a fresh spinach salad with pears, walnuts, fresh blue cheese, croutons, and
Greek dressing.
